Guinness Beef Stew: Ingredients: - 1 tin Guinness - 700g diced beef (or 400g if just making stew/pie alone) - 3 carrots, sliced and chopped - 2-3 white onions, sliced - 3 celery sticks, diced - 1 litre beef stock (or veg stock) - 2 - 3 tbsp plain flour/cornflour - 1 heaped tsp Marmite (optional) - 2 tbsp Worcestershire sauce (optional) - 1 heaped tbsp onion granules (optional) - Salt, pepper, olive oil, and butter
Method: 1. Start by heating a mixture of olive oil and butter in a large skillet or frying pan over medium-high heat, then adding the diced beef in to start browning. Once browned, transfer the beef to a plate. 2. In the same skillet, add a bit more butter if needed. Then, add the sliced onions, chopped carrots, and diced celery. Sauté them until they start to soften and pick up some color, usually for about 5 minutes. 3. Add the seared beef back to the skillet and stir everything together and now, sprinkle 2-3 tablespoons of plain flour/cornflour over the mixture in the skillet. Stir well to coat the beef and vegetables evenly with the flour. This will help thicken the stew as it cooks. 4. Transfer the entire mixture from the skillet to the slow cooker. 5. Pour the tin of Guinness and beef stock over everything in the slow cooker, also adding your optional ingredients here (marmite, Worcestershire sauce, onion granules) 6. Give it a gentle stir to combine all the ingredients, then adding salt and black pepper. 7. Cover the slow cooker with its lid and set it to cook on the low setting for 8 hours. 8. After 8 hours, your Guinness Beef Stew should be tender and full of deliciousness. Taste it and adjust the seasoning if needed. 9. Serve hot, ideally with some crusty bread or mashed potatoes.
