Apple and Blackberry Crumble (serves 3): 125g Plain Flour 65g Caster Sugar 65g Butter, room temp (I personally use salted butter!) 3 apples, peeled and core removed, chopped into chunks 35g Demerara sugar 35g extra butter (for melting with the fruit) 120g washed blackberries 1 small tsp cinnamon powder

Mix the plain flour, caster sugar, cinnamon and butter using your fingers in a bowl until a crumb/crumble is formed. Bake these in a 180c pre-heated oven in an oven proof dish until the crumble has gone slightly golden and crunchy. Melt the demerara sugar and remaining butter in a saucepan, for 2 minutes, put the apples in an cook for a few minutes until they start to soften (low heat, don't allow the butter to burn!). Put the blackberries in and cook for a few morn minutes until the fruit is softening and a syrup is forming. Place into an oven proof dish, put the crumble ontop and bake for 15-25 minutes, depending on whether it was chilled or not! Serve with ice cream AND custard if you want the ultimate experience!
